Starch is a form of carbohydrate and is a symbol of man’s dependence on vegetables for the purpose of obtaining energy. Plants store the energy in the form of starch which is made of a chain of glucose molecules. Primarily gastric amylase, in animals including humans, is the enzyme that is involved in the process of digestion of starch obtained from vegetables. Squash is a vegetable native to Central America and Mexico. In North America, squash is categorized in two varieties viz., summer squash and winter squash. Summer Squash
Summer squash have a soft cover seeds. The summer squash is harvested before it is fully ripe. Due to the soft cover and seeds, the summer squash can be eaten as a whole, excluding the stem. Zucchini

Yellow Squash
There are a lot of varieties that come under yellow squash like straightneck and crookneck. The crookneck has a curved shape at the bottleneck of the gourd. Scallop

A group of four species of the Cucurbita genus which are native to Central America and Mexico are altogether known as squashes. Although the squash plants have their origin in the continent of Central America, they are also grown in Europe, North America, Australia and India.
